Recipe - Lemon and Hemp Pepita Balls
100 g flaked coconut
150 g pepita seeds (pumpkin seeds)
Finely grated zest of 1 lemon
3 tbsp lemon juice
3 tbsp hemp seeds
1 tbsp unhulled tahini
1 tbsp raw honey
Make approximately 20 balls
- Place coconut flakes and pepita seeds into a food processor and blend for 1 minute or until smooth.
- Transfer 1/3 cup of the coconut mixture to a large plate and set aside.
- Add hemp seeds, lemon zest and juice, tahini and honey to the food processor with the remaining coconut mixture and mix on low speed for 30 seconds.
- Roll small balls of the mixture into the reserved coconut mixture to lightly coat.
These balls are perfect for nut-free lunch boxes and store well in an airtight container for up to 7 days or frozen for up to 3 months.
