Hemp Dukkah

Ingredients
1 cup of Ananda Food hemp seeds
1 cup of white sesame seeds
½ cup of black sesame seeds
Ananda Food Hemp seed oil
Spices:
1 tsp of cumin seeds
½ tsp of coriander seeds
1 pinch of ground nutmeg
1 pinch of chilli flakes ( optional )
Ground pepper and sea salt to taste


Directions
Conventional
- Toast the hemp seeds and sesame seeds
- Pre heat oven to 160 degrees
- On a roasting tray put a sheet of baking paper and place hemp/sesame seeds with a drizzle of hemp seed oil ( do this separately as they will cook at different rates)
- Roast it in the oven until lightly coloured ( approx 8 mins) remove and allow to cool.
- In a mortar and pestle grind together the spices with sea salt.
- In a mixing bowl add the black and white sesame seeds with the toasted hemp seeds and season with the spice mix.
- Add more or less spices as you prefer.
Notes
Place the hemp dukkah in a small seal tight jam jar and keep until required ( will keep fragrant for 7 days).
Ideal to dress up a simple green leaf salad or sprinkle on top of hummus.
Or delicious with sourdough bread dipped in hemp seed oil then in the dukkah.
